Acciuga in Rome's northern central Prati district is chef Federico Delmonte's new venture. This young and talented chef from Italy's Le Marche region has a strong respect for fish and as the name suggests (Acciuga in English is anchovy), this is where seafood lovers can truly unite and rejoice. His exquisite, delicate flavours are inventive, even a little risky but without ever taking away from the delicate tastes of the fish.
