This Light Bluish Green cold hardy opuntia cactus will be a great addition to your drought tolerant landscape. Its also called the Micky Mouse Cactus because it tends to grow balanced with one pad on the left and another one on the right that resemble mouse ears. It produces edible, juicy light green prickly pears. No need to cover this beauty in the winter since it is hardy down to 15 degrees Fahrenheit. Furthermore, you can cook the tender pads as nopales.
