Atlantic Ocean / Gulf of Cádiz
The Stone Bass is a semi-fat white fish, characteristic of the area where the Mediterranean meets the Atlantic (Huelva and Cadiz fishing grounds), where it is considered a gastronomic jewel.
It usually lives close to the coast, which allows it to be farmed. Ours is the wild variety, whose flavour nuances are incomparable to any other.
