Selection

Catch large adult fish using small-boat handline fishing gear or by commercial longline fishing gear (450 to 900 feet). Best to catch between April and October.

Storage

Keep fish chilled in a cooler or refrigerator. Can be dried or frozen for longer storage.

Preparation

  • Wash fish well before use.
  • Remove the guts and cut the flesh with a knife.
  • Can be eaten raw.
  • Can be grilled, seared, broiled, baked, sautéed, dried,or smoked.
  • Avoid overcooking as fish cooks quickly and can easily dry out.

Albacore Tuna

Albacore tuna has very long pectoral fins. The flesh is medium firm, moderate to rich in flavor, and white to pink in color, but becomes much firmer and turns bright white when cooked (Hawaii Seafood Council, 2012).
