For this dish from Jiyeon Lee (of Sobban and Heirloom Market BBQ in Atlanta), make sure to buy whole squid; precut rings will slip through your grill grate.

Ingredients

4 Servings

Vegetable oil (for grilling)

pound cleaned squid

2

tablespoons toasted sesame oil

Kosher salt and freshly ground black pepper

Preparation

  1. Step 1

    Prepare grill for high heat; oil grate with vegetable oil. Toss squid with sesame oil in a large bowl; season with salt and pepper.

    Step 2

    Grill squid, turning occasionally, until lightly charred and cooked through, about 3 minutes. Cut bodies crosswise into thin rings for serving, if desired.
