Seasonally fresh to Northwest waters July through September. These prized fish swim in large schools and are hook and line caught and delivered to coastal ports. Fantastic loined out and cooked on the barbecue. There soft flesh is high in oil content and when cooked rare to medium holds a tender and delicious flavor and texture.
