Paccheri con Tonno, Piselli e Pomodoro

This is a perfect example of using store cupboard ingredients and frozen food to make a simple, delicious meal.

A tin of tuna, some tinned tomatoes, frozen peas and a few condiments together result in a super tasty, fast and easy dish.

This also happens to be a dairy free (DF) dish for those dairy intolerant peeps out there.

And if you don’t like fish, simply leave out the tuna - it’s just as delicious.

I used paccheri pasta but feel free to use any other pasta you have. Just a scattering of basil brings it all together.

Paccheri con tonno, piselli e pomodoro recipe:

1/2 packet of paccheri pasta or something else
1 tin of plum tomatoes (400g)
2-3tbsps olive oil
1-2 garlic cloves- sliced thinly
Pinch of sugar
Pinch of chilli flakes - add more if you like
Seasoning
Normal size tin of tuna (drained)
10 tbsps frozen peas
Handful green stuffed pimento olives halved (optional)
Basil leaves

Serves 2/3 - just double up for 4/5

1. Bring a pan of salted water to boil for cooking the pasta
2. Add the oil, garlic and crushed pepper flakes to a cold pan and over a medium heat stir for a minute or two.
3. Add the tomatoes, stir, then add in the salt and sugar and cook for about 10 mins stirring occasionally on a low/medium heat.
4. When the water boils, add the pasta and cook al dente.
5. Add the tuna to the sauce, then just add the frozen peas when you know the pasta is cooked (so you don’t overcook them).
6. Drain your pasta and add to your sauce, with the chopped olives if you want otherwise leave them out and combine together.
7. Taste the sauce to make sure you are happy with the seasoning and adjust if needed.
8. Serve with scattered basil leaves.
